Easy Cheesy Roast Beef and Grilled Asparagus Recipe

Ingredients -

  • 1 1⁄2 lbs sliced medium-rare roast beef
  • 1 bunch asparagus
  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 1 1⁄2 cups milk
  • 1 cup grated sharp cheddar cheese
  • 1⁄2 teaspoon salt
  • 1⁄8 teaspoon black pepper

Preparation:

Snap the woody ends off the asparagus or use a knife to cut them off. Preheat the grill and cook the asparagus, turning it quarter of a turn every minute, until it begins to char. The asparagus will take about 5 minutes to cook fully.

Melt the butter in a pan and take it off the heat. Stir in the flour, salt and pepper. Add the milk gradually, stirring until well-blended. Cook the sauce over a low heat, stirring it all the time, until it is smooth and thick.

Cook it for 5 minutes and then stir in the cheese. Keep stirring until it is very smooth. Serve the roast beef chilled or warmed up, accompanied by the asparagus and cheese sauce.
