Italian almond flour cake, also known as Torta di Mandorle, is a delicious and gluten-free dessert that is perfect for any occasion. Here is a simple recipe to make a classic Italian almond flour cake:

Ingredients:
  • 1 1/2 cups almond flour
  • 1/2 cup sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar, for dusting

Instructions:
  1. Preheat your oven to 350°F (180°C) and grease a 9-inch (23 cm) cake pan with butter or cooking spray.
  2. In a mixing bowl, combine the almond flour, sugar, baking powder, and salt. Mix well until combined.
  3. In a separate mixing bowl, whisk the eggs until they are frothy. Add the melted butter and vanilla extract to the eggs and whisk until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the batter.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake the cake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center of the cake comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Once the cake is completely cool, dust it with powdered sugar before serving.
