Want to try a new filling for your ravioli? Then learn how to make a Ravioli – Egg Yolk by following these simple steps.
INGREDIENTS:
QUANTITY ITEM 200g Flour 1 Egg 1 Egg Yolk 1 tablespoon Water Pinch Salt Pinch Grated or Shaved Parmesan (As desired) Fresh Chopped Parsley 100g Olive Oil
DIRECTIONS:
- Mix flour and eggs together. Use enough water to create a stiff dough. Let it knead for 10 minutes until smooth.
- Flatten it using a rolling pin until it forms the thinnest setting.
- Once the thinnest setting is achieved, cut rounds about 12cm in diameter.
- Using a little of the egg white, wash the center and carefully place the egg yolk right after.
- Wash the edge of the rounded cut-out with egg white to seal the edge after placing another rounded cut-out on top. This process will enclose the egg yolk.
- Pin back the edges.
- In a saucepan, pour in salted water with a drizzle of oil. Let it boil.
- Place the ravioli in the saucepan. Cook for 2 minutes until it floats. DON’T OVERCOOK to ensure the gooeyness of the egg yolk.
- Serve with olive oil and top it off with parmesan and chopped parsley.
- Serve well.
